big job but worth the effort...I always try and buy meat on the bone and do this myself...that way you can see what you really get and use the best bits for every dish...right?

this looks like it should look...in the netherlands people won't buy it like this, they think it is not good! so it is very hard to lay your hands on one...but I know the way to get it.
